Meatloaf, It's What's For Dinner

Individual ramekins of Meatloaf Goodness (mix: one row of crumbled saltines, 3 pounds of ground beef, ketchup, sauteed yellow and green pepper, sauteed vidalia onions and mushroom, shredded cheddar cheese, one egg)
with a side of Oven-roasted Veggies (bake red potatoes in olive oil and seasoning first then add "crunchy veggies and any fresh
herbs for final 25 minutes)
. Bake both for an hour on 375.

I added ketchup criss-crosses on top, you can skip or do something else.

PS: I also made a loaf of the metaloaf. But the individual ramekins are a nice touch for one-on-one meals :) Purrrrrrr


  1. Hmmm... I had a similar concoction last night too. :)

    Take one frozen Tyson Breaded Chicken patty.

    Microwave on high for 1 minute 20 seconds.


    Place once slice of swiss cheese on top of chicken patty and bottom half of hamburger bun, underneath patty.

    Return to microwave and heat on high for 12 seconds.


    Squirt some tartar sauce from squeeze tube on top of cheese and crown with upper half of hamburger bun.

    Twist top bun 180 degrees clockwise, then 180 degrees counter-clockwise ( to evenly distribute tartar sauce ).

    Allow to cool for 1 - 2 minutes and then ENJOY! :)~
